Oshi Salmon Vegan Caesar Salad

A fresh take on a classic. Oshi’s whole-cut plant-based salmon is seared to golden perfection and served over crisp romaine, tossed in a creamy, garlicky vegan Caesar dressing. Finished with crunchy croutons, this salad balances richness, freshness, and texture in every bite.
Ingredients:
For the salmon:
- 2 Oshi plant-based salmon fillets (thawed overnight in the fridge)
- 1 tbsp olive oil (for searing)
- Salt and black pepper, to taste
Vegan Caesar dressing:
- 1/3 cup vegan mayo
- 1 tsp Dijon mustard
- 1 small garlic clove, finely minced
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1 tsp capers, finely chopped
- 2–3 tbsp water (to thin, as needed)
- Salt and black pepper, to taste
For the salad:
- 2–3 cups chopped romaine lettuce
- 1 cup croutons
- Optional: vegan parmesan-style topping
Instructions:
1. Prepare the dressing
In a small bowl, whisk together the vegan mayo, Dijon mustard, garlic, lemon juice, and chopped capers. Add water a little at a time until the dressing reaches a smooth, pourable consistency. Season with salt and pepper to taste.
2. Sear the salmon
Heat the olive oil in a non-stick skillet over medium heat. Pat the fillets dry and season lightly with salt and pepper. Sear for 3-4 minutes per side, until golden on the outside and heated through.
3. Assemble the salad
In a large bowl, toss the romaine lettuce with the Caesar dressing until evenly coated. Add the croutons and gently mix.
4. Plate
Divide the salad between two plates or bowls. Place a warm salmon fillet on top of each.
5. Serve
Finish with a sprinkle of vegan parmesan, if using, and serve immediately.
