Blackened Oshi Salmon Burger

Bold, smoky, and deeply satisfying. Oshi’s whole-cut plant-based salmon is coated in a rich Cajun-style crust, seared until perfectly charred, and layered into a burger with a cool, zesty lime spread and crisp, fresh toppings. A messy, flavor-packed bite that feels straight off a restaurant menu.

Ingredients:

  • For the salmon:

    • 2 Oshi plant-based salmon fillets (thawed overnight in the fridge)
    • 2 tbsp Cajun or blackening spice blend
    • 1 tbsp neutral oil (for searing)

    Zesty lime spread:

    • 3 tbsp vegan mayo
    • 1/2 tsp garlic powder
    • A generous squeeze of fresh lime juice (plus zest, optional)

    For assembly:

    • 2 burger buns
    • 1/2 red onion, sliced into thick rings
    • 1 large tomato, sliced
    • 1 cup shredded iceberg lettuce
    • Pickled cucumbers

Instructions:

1. Prepare the lime spread
In a small bowl, mix the vegan mayo, garlic powder, and lime juice. Adjust to taste and refrigerate until ready to use.

2. Season the fillets
Pat the fillets dry with paper towels. Press the seasoning firmly onto both sides to create a well-coated crust.

3. Sear the salmon
Heat oil in a non-stick skillet over medium- low heat. Place the fillets in the pan and sear covered for 2-3 minutes per side.

4. Toast the buns
Lightly toast the burger buns in a pan or toaster until golden.

5. Assemble
Spread the lime mayo on the bottom bun. Add the blackened salmon fillet, then layer with red onion, tomato, and shredded lettuce.

6. Serve
Close the burger and serve it immediately while hot.
