A vibrant, balanced bowl featuring Oshi’s plant-based salmon. The fillets are seared and glazed in a rich, sweet-savory teriyaki sauce, then served over warm rice with fresh cucumber and protein-packed edamame. Simple, satisfying, and full of flavor.
Ingredients:
- 2 Oshi plant-based salmon fillets (thawed overnight in the fridge)
- 1/4 cup teriyaki sauce (thick glaze style)
- 1 tbsp neutral oil (for searing)
- 2 cups cooked jasmine or brown rice
- 1 cup shelled edamame, steamed
- 1 Persian cucumber, thinly sliced into rounds
Instructions:
1. Prep the fillets
Pat the fillets dry with paper towels to ensure a good sear.
2. Sear the fillets
Heat the oil in a non-stick skillet over medium heat. Place the fillets in the pan and sear covered for about 3 minutes, until golden on the first side.
3. Glaze
Flip the fillets and immediately add the teriyaki sauce. Cook for another 3-4 minutes, spooning the sauce over the fillets as it thickens into a glossy glaze.
4. Assemble the bowls
Divide the warm rice between two bowls. Arrange the edamame and cucumber alongside the rice, then place the glazed salmon fillet on top or in the center.
5. Serve
Spoon any remaining glaze from the pan over the fillets and serve immediat
